This is evident if you examine profit margins for some of these corporations. You are correct that many states have laws in place to protect consumers against corporate greed. This is not a revolutionary idea. Secondly, when Trump left office the economy was in tatters. You can blame this economic calamity on the pandemic, however, no reasonable person would say that Trump handled the pandemic well. If he had, he would be finishing up his second term this fall. Since Biden has been president the economy has recovered and inflation has cooled off considerably. The stock market is soaring, and consumer confidence has returned. During the convention, Fmr Pres Clinton made the factual comment that Democrat administrations were grossly more successful in creating jobs over the last 25 years. ("You’re going to have a hard time believing this, but so help me, I triple-checked it,” Clinton said in the speech. “Since the end of the Cold War in 1989, America has created about 51 million new jobs. I swear I checked this three times. Even I couldn’t believe it. What’s the score? Democrats 50, Republicans one.”). What you are not understanding is the status quo is unstainable. Wealth disparity will be one of biggest problems in our future if we don't address it with policy that ensures that the middle and working class get a fair share of this big American pie. The middle class built this country, and that will always be the case in a capitalist economy. You have to have consumers for the system to work. Consequently, that's where the Democratic party is focusing.
Price gouging (or gauging as she called it), which is a form of price controls (or price fixing) puts the prices of what you buy in the hands of a government official. He/she can decide your apple should cost 50 cents even when it costs the retail sell $1.50 each. So what happens in that case? Sellers stop stocking. Producers then stop growing it. Before you know it, shelves are bare. Producers won't continually absorb losses for the notion of being "unfair" pricing. Communist China figured that out the hard way. Venezuela, once the richest country in South America, has thousands of starving people because of price fixing. Democrat economists have already slammed this idea --- and Harris' own consultants, like Gene Sperling, are already out lamenting how this is soooooo misunderstood. They know on examination this is a loser --- as will be most of what Harris publishes in the coming days. She was a very unpopular VP, came in dead last in the 2020 (because Democrats didn't like her in the least), and has never won a primary (or a single vote in a primary). The party made a mistake and once the fantasy land melodrama of the convention fades, she has nothing left to offer.
I think you misunderstand what's going on in this country. Most of the country doesn't want to go back to Trump's lunacy. Fearmongering and GOP forecasts of doom and gloom aren't going to have the impact they seek in this election cycle. Unfortunately for the GOP all they have is MAGA and Trump.

You're forgetting Jan 6. Democracy (as we know it) almost didn't survive.
